Matcha Smoothie

Think Green!!!

I LOVE Matcha Green Tea.  I am an addict!  My previous post on Matcha lists all the great reasons to drink it, Matcha? You Betcha!

I find around 3:30 to 4pm I need a little pick me up and this has been my go-to snack as of late. 

Matcha Smoothie

1 cup ice

1 cup Almond Milk

2 teaspoons Matcha Green Tea powder

(I mix it up with a little hot water from the microwave before dumping in the blender)

Blend and serve!   

If you don’t like the taste of Matcha…add 4 to 5 drops of agave nectar or stevia to the mixture while it is blending.  I grab a handful of pistachios (about 1/4 a cup) and I am golden!

This afternoon pick me up weighs in at 200 calories, 17 g of fat (heart-healthy fats from nuts, remember these fats do not make you fat), 7g of protein, 4g Fiber, along with Vit A, Vit C, Calcium, Iron, Vit D, Vit E, Potassium, Magnesium, Phosphorus, Thiamin, Copper, & Vit B6-hard to beat this combo! (Just the smoothie is 40 calories).

And takes less than 5 minutes to make!  Easy!

The kids?  No, I don’t have them on Matcha tea…YET!  But they join me with the pistachios and sliced up pear…still green…still easy…and so GOOD for them!

We love to shell pistachios in our house, but you can also buy them shelled.  Costco sells “Wonderful Pistachios“, just make sure you measure out the 1/4 of a cup…1/2 a cup becomes closer to a meal, than a snack.

A few more GOOD things

1.   Think Thin.  OK.  I am not a fan of the name “Think Thin”.  I think if I am honest it is because every time I stock up on these I feel like people are looking in my cart and thinking “lady, a Think Thin bar ain’t gonna make you thin!”  Or maybe I am just sure that is what I would think…lol!  I have tried every protein bar out there and these are by far the best.  Though not all Think Thin bars are equal.  Most, to me, taste like cardboard, but the White Chocolate & Chocolate Dipped Mixed Nuts are almost too good.  I mean sometimes I feel guilty eating one because it is so decadent.  These are processed, of course, and nothing you should eat on a daily basis…but I do rely heavily on these when we travel…literally packing one or two boxes!  Just under 200 calories, 10 g of protein and 4 g of fiber make them a choice I can live with when preparing my own food, or choosing a healthy option is not an option.  These go on sale all the time so shop them, and they are less expensive if you buy the box. 

2.  Hannah’s Tzatziki Yogurt Dip Greek Style.  I don’t know who Hannah is, but she is making my life TASTE pretty darn good!  I have to admit when I changed how I eat, and the family followed suit, I really stopped going to Costco.  When I decided to focus on fresh, local (when possible), organic (when needed, remember a lot of fruits and veggies don’t need to be organic-check the list) produce it became about quality not quantity.  Buying and using what we needed as a family, not buying too much and tossing it out.  There also just wasn’t much from Costco that we needed in bulk anymore. 

So I owe this new find to my friend Christina because I would not have discovered it on my own!  When we were together over the Holiday’s she mentioned how they could not live without Hannah’s Tzatziki Greek Yogurt Sauce.  She said it had replaced salad dressing, dips, and sour cream in their house!  She was right.  We don’t eat a lot of dairy as you all know (all milk in this house is Almond now), but there are places that just need it…and I have been a life-long sour cream fan.  I like the cold sour-ish texture, coupled with hot and spicy! No one should be eating sour cream, dips, or ranch dressing on a regular basis…but when you want it, or a recipe needs it…this is an AWESOME option to have.  (Hannah’s also makes a yummy Bruschetta Sauce that I mentioned before.)

A serving size, 1 Tbl, has o protein and 0 fiber, which is a bummer.  I don’t like to eat calories that can’t get one or both of those things in.  However it also has ZERO sugar and only 25 calories…25 CALORIES per serving.  That makes up for the lack of protein and fiber because though they are “empty” calories, there are not too many of them!

Added Bonus…I get to say Rappleberry!

Not much of a bagel fan.  Never have been.  400 calories of enriched flour settling into my blood stream just makes me tired!  But my family LOVES bagels!!!  My Husband is from New York and he makes it his mission to locate the best bagel no matter where in the world we may be.  He and the kids go to bagels every Saturday morning, a tradition they all look forward to. 

About a month ago I stumbled onto a pretty reddish/pink bag in the bread aisle at the PCC that said “Rappleberry” on it!  Intrigued to see they were actually bagels I brought them home and served them (sprouted and all) to the pickiest bagel eaters I know and wouldn’t you know it…they LOVED THEM!

I love them because I can get a fabulous, fiber-filled, hi-protein breakfast into my kids in a hurry on school days and know they will make it to lunch without crashing and burning into a sleepy funk.  It is hard to believe these bagels are THIS good, given they are full of healthy stuff and really they are Sprouted Wheat, but TRUST me, they are DELISH!  I do wish they came sliced, but I just slice them when I buy them, place them back in the bag and keep them in the freezer.  They go straight into the toaster and do not get chewy or stale tasting like a regular bagel can.

I have to say all these fabulous new products sure do make clean eating a whole lot easier, and a whole lot more fun!  Who isn’t going to love saying “Rappleberry”?

Oil Free Pesto

Those of you who know me KNOW how much I love the virtual world.  When I look at all of the lifestyle changes I have made on a personal level, and for my family, it is all in thanks to the internet.  You can say I would have read books, done a lot of research…but I would never have succeeded (previously I never even came close).  I have the attention-span of a nat, and the patience…well getting better as I age, but I am definitely bred for instant gratifiaction!  Being online helped me to see the light at the end of the tunnel.  It also has been easy to find simple recipes, easy shopping tips, fabulous products, research where and how those products are made…and most of all find support.

Those of us that struggle with our weight are usually enabled.  I don’t mean that people who loves us want to harm us (though I am sure this can be true for some) but more I think people are just resistant to change, and comfortable with what they know.  If all they have ever known was us looking a certain way, and eating certain foods there can be resistance when we start to eat differently.  Online I was able to find support, understand why I ate the foods I ate (addiction to sugar, fat, and processed foods) stop beating myself up for gaining weight back that I really never stood a chance of keeping off when I returned to eating the standard American Diet, and find other people who were also making the same changes!  For me the internet (facebook, twitter, blogging) has been the catalyst to finding a healthier, happier life!

So on Facebook I started following “Clean Eating Chelsea“.  She posts some great recipes and I have had a stack I have been waiting to try.  One that is on my list is Pesto Mac n’ Cheese (ok, Vegan…but you all know if doesn’t pass the mustard with the Family I won’t post it) that looks divine.  In preparation I made the pesto sauce.

Clean Eating Chelsea discovered you could make an awesome Oil Free Pesto Sauce from Jenna, who blogs “Eat, Live, Run“…see what I mean, without the Web I would just be sitting around either wishing I could dive into a plate of pesto…or eating the pesto and feeling really cruddy wishing I could just hide from the world!

Today I get to have my cake and eat it too…REALLY…check out Earth Cafe Products (cheesecake that won’t ruin your clean-eating mojo)- AMAZING, and I found them virtually too!

So back to the Pesto…even my Mom wanted the recipe, and she is SUPER picky when it comes to all this “clean-eating business” as she calls it!  You all will be amazed, SIMPLY AMAZED at how yummy this sauce is!  I ate mine right then on a piece of Dave’s Killer Bread toasted…yummers!  But you can throw this on any pasta, or in any dish you would normally buy or make pesto for!

Oil-Free Pesto

Ingredients:

2 cups packed basil leaves

1 cup packed chopped parsley

1/4 cup Panko bread crumbs

2 garlic cloves

3 T white miso (can find at QFC, Safeway, Whole foods…just ask)

1/4 cup water (more or less depending on desired consistency)

Directions:

Blend basil, parsley, garlic, miso and bread crumbs in either a food processor or high speed blender until smooth. Slowly drizzle in water while machine is running to reach desired consistency.

Spread pesto on sandwiches or use as a pasta sauce. Freeze individual portions in little snack sized sandwich bags for later!

mason jars, the perfect container

I LOVE mason jars.  I love to put flowers in them, serve iced tea in them, use them for pens, pencils and paint brushes.  This summer I started using them to store snacks in.  Here’s why:

I am a visual person and I eat what I see.  One of the easiest things I did in cleaning up my eating was getting the JUNK out of my house.  I was never the type of unhealthy eater that walked around thinking about what kind of crud I was going to inflict bodily harm upon myself with next.  However when I was hungry and I opened that pantry door…if I SAW it, I ATE it!

I know I have said it a million times and I will not stop preaching that preparation is 99% of the arsenal you need to win the battle against junk-food!  It is when we surround ourselves with garbage, or venture out into the world hungry that almost all of the damage is done.

So I noticed this to be true with my kids.  Neither of them have any weight issues to date.  So far they know and use food as fuel, energy that keeps them going.  But what I was finding was when they were rummaging through the pantry I had no idea how much of the food in there they were eating at a time.  It wasn’t until they would hand me an empty bag or box that I knew an item was gone.  I also realized early on that when a child is hungry and you provide the snack they eat it, even if EXTREMELY healthy!  However if you tell them to help themselves they will choose the easy, fast options…crackers, bars, goldfish.

I can’t always be standing by to prepare a healthy snack.  And honestly at the rate these two eat (all day long) I don’t even want to try…I would do nothing else.  So I have taken to placing the options I am happy with in Mason jars on the counter.  Here they get choices, I get an idea of how much they are eating, and all the snacks stay fresh!  Plus I know when I need to buy more, verses finding the empty package on the floor of the pantry when I go to make lunches!

When I can make it I do.

When I can’t they can help themselves!

Matcha? You Betcha!

I have been drinking matcha green tea for about 6 months and it is AWESOME!  I really do believe it has played a role in my looking better and feeling better, though there is no way to prove that:)  Matcha tea is pretty mainstream now and if you haven’t tried it give it a whirl!

On the Dr. Oz Show, Rachel Beller said that green tea is great for you, but you need 4-7 cups a day to make a difference.  Matcha Green Tea is great though because 1/4 – 1/2 tsp of Macha Tea is equal to 8-10 cups of regular tea in terms of Antioxidant Power.  For some added taste, squeeze some lemon into your Matcha Tea!

Like other types of green tea, matcha not only speeds up your metabolism, but is chock-full of antioxidants and other powerful superfood properties such as aiding stress reduction, lowering cholesterol, boosting brain health and fighting cancer. Matcha is available in a concentrated powder and can be found at health food stores. (I buy it at Uwajimaya)

On the run I order a matcha from Tully’s.  I ask them for a Grande HOT tea and then have them pour it over ice in a Venti cup.  Sound high maintenance?  Well ask any Barista and they will tell you that order is NOTHIN’!  If you can’t drink it straight up add a splash of non-fat milk!

But be sure you are not ordering a matcha latte.  My matcha order will run you 26 calories, verses 250 when you throw in the milk.  Keep it simple, keep it clean.

zucchini spaghetti

You may remember how I feel about Spaghetti Squash, DELISH!  That find saved our family numerous calories and insulin spikes as we ate almost NO pasta last winter, and made Spaghetti Squash our new staple.  Well this fall my new find is Zucchini Spaghetti!  I think as far as flavor and texture it might be a runner-up to Spaghetti Squash, but when you factor in prep time it definitely takes the lead!

Personally, I have never cared for zucchini.  I think I always wanted it to be a cucumber when I took a bite, and was just left feeling a bit letdown.  Zucchini Spaghetti has changed all that and now my veggie drawer is overflowing with these super healthy little delights!

Prep 

You will need a Spiral Slicer, which can be used for many MANY things besides making your zucchini into spaghetti.  I bought an inexpensive one for around $20, and it works great!

Step 1

Peel your zucchini if it is not organic, otherwise leave the skin on and spiral slice.  1 zucchini takes about 2 minutes.

Step 2

Place into bowl

Step 3

Add Sauce

And you have the perfect base to add the protein of your choice!  Voila, a low-cal, healthy and YUMMY dinner!

Ounce for Ounce these 2 Peanut Butters look pretty similar?  Yep, that is the kicker.  The only glaring difference is that Jif has 3 times more salt!  But this is America, land of the loopholes.  The 2% or less (per serving, not jar) allows companies to post 0 trans fats as long as there is less than half a gram in a serving.  A serving is two tablespoons. Two percent would be 9 grams of trans fat per 454 gram jar.

Does peanut butter REALLY need to be Organic?  Pesticides and the peanuts: Peanuts are one of the most highly sprayed crops out there.  You decide.  My kids eat so much of the stuff it is a no-brainer for me.

If your peanut butter is SOLID when you put the knife in it has trans fat, that is why an oil that should not be solid is!  Period. 

Tips for dealing with the oil:

The oil in peanuts is monounsaturated, and diets high in this type of fat have been shown to lower levels of LDL (“bad”) cholesterol while preserving levels of HDL (“good”) cholesterol. Peanut oil also contains beta-sitosterol, a plant sterol that studies show can inhibit cancer growth.

Sure, you could dump the oil, but I say keep it! So here is how to have less mess

  • Store the PB upside down before opening it!  The oil will rise to the bottom of the jar and then you can sir it back in with less mess.
  • If you just want to dump it, try dumping half
  • Dump all the oil out mix PB by adding it back in a bit at a time

*I would also like to note my girlfriend told me she didn’t buy organic peanut butter because she has no room in her fridge!  I thought “Oh crud, I have never put it in the fridge!”  I promptly came home and checked and Costco’s Organic PB does not need to be refrigerated!

Gadgets Galore!

Santa knew EXACTLY what this clean eater needed and he HOOKED me up!  Thanks Santa, you’re the best!

If you read this blog you know what a fan I am of the Nicer Dicer!  (BTW, this fabulous product is available from QVC in AWESOME colors now, around $40, and it also now has a third chopping size-COOL!  I paid $20 for the white one before it was a QVC favorite and you can still find it on ebay for $20 and under. Video demo of Nicer Dicer can be seen if you click above the product photo on the video tab, at QVC).

In looking for a few Nicer Dicers to give as gifts I discovered another fabulous product they make called the Genius Snap N Slice 5 Piece Food Wedger and Multi Slicer!  Umm, hello…how did I NOT KNOW about this?  So I asked and Santa delivered.  (ebay again, can get them for under $10, or around $20 on Amazon)

This is perfect for:  cucumber slices, mushroom slices, lemon wedges, strawberries, egg slices, radishes, beets, tomato wedges, zucchini’s so forth.  For me this is perfect for when a recipe calls for just a handful of wedges, slices, or chunks.  Not for heavy dicing.  Also perfect for throwing together a salad super-quickly that looks like you spent hours preparing as far as the dicing and prep goes!  Pretty!

I also come across recipes almost weekly that call for veggies to have been prepped via a mandolin.  Now I don’t care how much you might like to slice, there is really no way to get pieces all as thin an in uniform sizes (so they cook evenly) as a mandolin will.  The down-side of mandolin’s… they are another item to store, and they are not cheap (if you get a good one).  Well Santa brought me the Adjustable Kyocera slicer/mandolin with a ceramic blade (which means I do not need to replace it or swap it out) and come to find it is only $25!  I have used it twice (yes twice since yesterday) and I love it!  The slice size is easy to adjust and it is super simple, with cleanup being a snap!

Again, if you only want one thing to assist you in prep work, get the Nicer Dicer!
